One-Armed Scallops

Description
A tasty scallop dish we made up while shopping and assembled once we got home. It's not too heavy but very flavorful.
Ingredients
- 1 lb fresh scallops
- 3 T olive oil
- 3 oz pesto with basil sauce
- 3 oz pesto with sun-dried tomato sauce
- 3 cloves of garlic (minced)
- 1 pn shredded cheese to taste (we used asiago)
- 9 oz fresh angel hair pasta
- 4 q boiled salted water
- 1 t oil
- 1 T salt
Instructions
1. In a hot pan, sautee the scallops in the olive oil and garlic.
2. As the scallops near completion, mix in the two pesto sauces for the last 2-3 minutes.
3. Add the salt and oil to the water and bring it to a boil.
4. Cook the pasta in the boiling water for 45-60 seconds.
5. Drain the pasta and serve immediately.
6. Top with the scallops/sautee mix.
7. Sprinkle with the shredded cheese to taste.
