Jalapeno Craisin Oatmeal Cookies

Description

Sounds like a bizarre combination, but the resulting cookies are quite good. The sweetness of the craisins offset a slight jalapeno taste. There is no heat in the cookie.

Ingredients
  • 2 c sifted flour
  • 1 t baking soda
  • 1 t applewood smoked sea salt
  • 2 c quick oats (not instant)
  • 2 c golden brown sugar
  • 1 c white sugar
  • 2 c unsalted butter (softened)
  • 4 T honey
  • 4 t pure vanilla extract
  • 4 large eggs (room temperature)
  • 2 1⁄2 c craisins (cranberry raisins)
  • 2 large jalapenos seeded all membrane removed and finely minced (about 1/2c)
Instructions

Preheat oven to 300 degrees.

Seed jalapenos and remove all membrane, finely mince and set aside. (Latex gloves are suggested so you don’t spread the jalapeno love all over the kitchen.)

Mix the flour, soda, oats, and salt thouroughly in a large bowl.

In a larger bowl blend the sugars together.

Add the butter and mix to a paste like consistency.

Scrape down the bowl and add the honey, vanilla, and eggs.

Mix at a medium speed until fluffy.

Add in the flour mixture, craisins and jalapeno, blend at low speed.
Aim for a uniform consistency, but don’t overmix at this point.

Drop cookies by rounded Tbl onto ungreased cookie sheets 1 1/2″ apart.

Bake for 25-27 min.

Transfer cookies to a cool flat surface directly from the oven and allow them to cool.

Notes

If you take the butter and eggs out of the fridge the night before it will save you the frustration of waiting for them to reach room temp.

These cookies have jalapeno flavor, but NO HEAT. If you want heat leave some seeds and membrane.

Yields about 6 dozen cookies.
